Side Dish 109 Calorie Southwestern Rice
INGREDIENTS:
1 cup water
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup cilantro
2 teaspoon cumin
1/2 teaspoon salt
1 14.5 ounce can tomatoes, cut up
1/4 cup long grain rice
1 teaspoon chili powder
1/8 teaspoon pepper
Dash bottled hot pepper sauce
DIRECTIONS:
In a medium saucepan combine water, green pepper, onion, celery, and salt. Bring to boiling; reduce
heat. Cover and simmer for 5 minutes.
Stir in undrained tomatoes, rice, chili powder, pepper, cumin, cilantro and hot pepper sauce. Return to
boiling; reduce heat. Cover and simmer approximately 20 minutes or till rice is tender and liquid is absorbed.
Makes 6 servings.
