Main Dish 281 Calorie Fish and Crab Enchiladas


INGREDIENTS:
4 ounces frozen crab-flavored fish pieces or crabmeat
2/3 cup skim milk
2 tablespoons all-purpose flour
Dash salt
1/4 cup shredded cheddar cheese (1 ounce)
1/2 4-ounce can chopped green chili peppers (2 tablespoons)
4 6-inch flour tortillas
3 tablespoons salsa
DIRECTIONS:
Thaw crab-flavored fish pieces or crabmeat, if frozen. Cut into bite-size pieces; set aside.
In a 2-cup measure stir together skim milk, flour, and salt. Cook, uncovered, on 100% power (high) for 1
1/2 to 2 1/2 minutes (2 1\2 to 31/2 minutes in a low-wattage oven) or till thickened and bubbly, stirring
every 30 seconds. Stir in cheese till melted. Stir in crab and green chili peppers.
Divide crab mixture among tortillas, spreading down the center. Roll up tortillas.
Place filled tortillas, seam side down, in 2 individual au gratin dishes. Cover with vented clear plastic
wrap.
Cook on 70% power (medium-high) for 3 to 4 minutes (2 to 3 minutes on high power in a low-wattage
oven) or till heated through.
Top tortillas with salsa. Cook, covered, on medium-high (high power in a low-wattage oven) about 30
seconds or till salsa is hot.
Makes 2 servings.
